An Aji Bourbon varietal hailing from the premier, high-altitude region of Pitalito, Colombia. This lot is produced by the iconic Nestor Lasso and the complex, hybrid processing of this coffee is both comprehensive and precise.
Blending aerobic and anaerobic washed processing and topping this off with Mosto from previous fermentations to both accelerate the process and intensify the flavour profile – it’s a banger!
Expect big, boozy body that balances stewed rhubarb sweetness with lingering licorice allsorts acidity and a pop of pink lemonade to finish.
