This process begins by hand-picking only the ripest cherries, selected for their higher sugar content. The cherries are then placed into sealed barrels, fermentation tanks or bags fitted with a one-way valve, where they ferment for 4–5 days.\u003c\/p\u003e\n\u003cp\u003eWhile inside, temperatures are closely monitored and kept at a stable 25 degrees. At this point, the coffee goes through CO2 flushing, causing oxygen to release, leaving a build up CO2 to help ferment the coffee in its own juices and mucilage.\u003c\/p\u003e\n\u003cp\u003eAfter the pressurised tank fermentation, the coffee is then sun-dried on raised beds for 15 days before being milled.\u003c\/p\u003e\n\u003cp\u003eWhat you get: a banger of a coffee with wilder, juicier flavours. By turning up the processing on an already exceptional coffee, the result is a cup with more intense, fruit-forward, wine-like notes that highlight the coffee cherry's natural character.\u003c\/p\u003e\n\u003cp\u003eExpect a cup with personality.
